A passionate advocate of continuous learning, Executive Chef Heman Tan, 48, has been working together with NTUC’s e2i (Employment and Employability Institute) on various initiatives, including the Professional Conversion Programmes and Master Classes since 2012.
One who leads by example, Chef Heman, the executive chef at JP Pepperdine, is always challenging himself and his students to push their boundaries at competitions.
“I feel that competitions are important because they train chefs to go back to their fundamentals. When you are in a restaurant, you don’t do everything yourself. But in a competition, you have to do everything on your own," he shared.
He explained that in preparing for such culinary competitions, chefs will be forced to practice every aspect of the cooking process, from food preparation, cooking and plating.
He added that when he started to share his knowledge through classes, he polished up his skills even more.
“Heman has been an example in the industry that partners e2i to achieve better connections within the industry and to move the industry forward,” said Gilbert Tan, e2i’s chief executive officer.
